Plums, Lemon, and Lavender
I had a bowlful of piddling yellow and red plum posture on my counter for almost a hebdomad . Igleanedthem from a Sir Herbert Beerbohm Tree down the street from my house , with the owner permission , and I could take as many as I want .
They were not quite ripe when I picked them , so I was letting them ripen while trying to decide what I was going to do with them . eat them fresh was an option , and do n’t get me wrong , there was plenty of that happening .
But , I wanted something more ( do n’t we all ? ) . The trouble was that these plums were unmanageable to play off , so that left out a honest number of options , such as plum cobbler , tart , orgalette .

I could have doneplum jam , as the pit can be strain out after cooking , but I would have needed a lot more plum tree to make that worthwhile . So , I thought about it for days before coming up with this chicken plum and lemon upside down cake formula !
I was listen to a cooking receiving set program the other day calledThe Splendid Table , which only tops nerdy Captain Cook can appreciate , and there was a char on the show who was talking about flavour whipped creams . This I needed to try !
Since the plum were a niggling bit tangy already , I decide to sum some gamboge as well , and we all live that gamboge and lavender is a match made in heaven – so lavender infused whipped cream it was !

Plum Upside Down Cake with Lavender Whipped Cream Recipe
I really had two variety of plums , yellow and scarlet . The ruddy ace were very much clingstone stone , have in mind the cavity would not well get out . I may decide to go get more of them and make plum jam , but that ’s a whole other post .
The scandalmongering ones were what I would call semi - free stone – they add up out ok , but not passing easily . So , I only had enough patience to do as many as was take for this bar , rather than the heavy amount required for a cobbler or crisp .
If anyone has tips for take pits out of small plums without completely destroy them , please let me love ! I think I did alright , though .

Start the Lavender Whipped Cream

Sprinkle the bottom of the butter frying pan with the brown gelt and lemon zest , then lend the plums in a single layer , cut side down .
