Nasturtium Flower Infused Vinegar Recipe
I love infusion recipes because they are generally pretty simple and aboveboard ! In fact , I write a whole Bible on infusion calledHealing Herbal Infusions .
For this genus Nasturtium acetum , collect as many of the blossoms as you may and put them into a pint jarful .
Then cover the efflorescence with white vinegar .

I like to use a high quality vinegar than just even old distilled , so I usually opt forwhite wine vinegarorwhite balsamic(Trader Joe ’s also dribble this ) .
Apple cider vinegar could also be used , but the color of the vinegar after infusing wo n’t be as vibrant . I prefer to use a white acetum for this understanding , because I love that color !
This acetum extract is so beautiful right from the beginning !

Cover the jar and get the bloom infuse for 1 - 3 weeks in a cool and dark spot .
After a few days you will notice the vinegar turn a beautiful shade of red ( or orange or icteric , depending on what color of blossoms you used ) .
When you are quick to use the vinegar , strain out the flowers and hive away the infuse acetum in a bottle or jar . It will last indefinitely !

Use the peppery taste vinegar to make salad fertilisation , marinade , or swash it on roasted veggies .
